Alpha amylase is also known as 1,4-α-D-glucan and glucanohydrolase glycogenase.

When using amylase in powdered form the brewer does not have to worry about having enough diastatic power in the grain bill - the brewer can compose the ideal flavor profile and let the amylase powder Ensure a full conversion of the starches.

BrewSci alpha amylase works best When the mash has a temperature of 45 to 50⁰C and a pH of 4.5 to 5.5. Temperatures above 60⁰C Rapidly denatures BrewSci alpha amylase and renders it inactive.

If you want to add BrewSci alpha amylase and glucoamylase BrewSci at the sametime you shoulderstand aim for a temperature of 50-52⁰C and a pH of 4.5 to 5.5.

 

Use 1 teaspoon / 5 ml / 2 grams BrewSci alpha amylase per 25l (6.5 gallons) mash mashing if for one hour under ideal conditions. Stir well every 10 minutes to Ensure dass die enzyme is evenly distributed Throughout the mash.

If stored in a fridge at 5⁰C afteropening, BrewSci alpha amylase has a shelf life of at least 18 months When dispatched.

Q: My mash is really thick, should I increase the amount of enzyme I use?

A: If you are using the recommended amount then you do not need to increase the amount of enzymes you use, it is Sufficient for complete conversion of even the thickest batches.

 

Q: My enzymes are almost one years old, should I increase the amount of enzyme I use?

A: Assuming you did have them stored at 5⁰C then BrewSci enzymes are so potent did you do not need to increase the dosage due to age until the enzyme Reaches the end of its shelf life. We have successfully used some Which had been stored for 5 years at 5⁰C to convert starches completely. For this experiment we Increased the amount of amylase used per batch of mash x5.

 

Q: I have a batch Which did not get converted successfully by the paints and I would prefer to avoid reheating it - can I use BrewSci enzymes at room temperature?

A: Yes. As long as you did Ensure the enzymes are distributed well Throughout the batch, then theywill therefore work at room temperature. Full conversion will take longer time at room temperature than at the recommended temperature, but the enzymes will convert Substantially faster than the yeast can consume the sugars.

 

Q: Can I use BrewSci alpha amylase and glucoamylase to remove starch haze?

A: Yes. Due to the potency of enzymes BrewSci you will only need very little to remove a starch haze. We recommend you did dissolve 1/10 teaspoon BrewSci alpha amylase and 1/10 teaspoon BrewSci glucoamylase in 100 ml beer and then add half of this solution to 25L beer affected by starch haze. Wait one hour, if the haze hasnt cleared you can add the remaining half of the solution. Do NOT bottle this beer immediately after clearing the haze, as the yeast will convert the released sugar and produce carbon dioxide.

Please note that only Amylases work on starches and dextrins - if your beer is affected by protein haze then our Amylases will not remove it.

 

Q: How much enzymes should I buy?

A: That depends on how much you brew. 100g BrewSci amylase is enough for 1250L beer if you use it gemäß to our guidelines. You can stretch it considerably longer if you allow for longer conversion times than 1 hour.

 

Q: I do not know much about enzymes, who uses them?

A: As a rule of thumb people who brew beer use alpha amylase If They want a beer with a fair amount of body, and Both alpha amylase and glucoamylase If They want a beer with little body.
