Scientific studies

Origin and quality of our saffron

Land preparation

A few months before planting cultivated Crocus bulbs, the land must be prepared . You must start by turning over the surface to be planted by working the soil to a depth of 20 cm. The bulbs are then planted by hand in summer. The cultivation of saffron requires geological and climatic conditions comparable to the Fertile Crescent: alluvial plains rich in fertile land where wild saffron was discovered a few thousand years ago.

Flower cultivation

A bulb gives birth to 1 to 3 bulbs which can themselves give between 1 and 3 flowers. The saffron flower is rather fast growing. It takes about 200 flowers to obtain 1 gram of dry saffron stigmas. Flowering occurs every day for about 6 weeks, from late September to mid-November .

Picking the flower

Saffron is harvested during flowering . The flowers are picked in baskets in the morning, at sunrise, to preserve the quality of the stigmas and in particular their safranal content which is quickly reduced under the rays of the sun. An experienced saffron harvester picks about 2300 flowers per hour.

pruning

This step consists of separating the pistils , made up of 3 stigmas from the rest of the flower. This operation determines the value of the saffron to come. In a working day, a pruner can “peel” up to 10,000 flowers!

Drying and sorting

Drying determines the quality of saffron and ensures its preservation . It is a delicate phase. During drying, their aroma is fully expressed thanks to the evaporation of water. The sorting stage takes place after drying and pruning. It removes any yellow filaments that may remain after pruning.

The stigmas of saffron flowers, traditionally grown in Iran according to the rules of Organic Agriculture , are sent to France for analysis and production of the extract.
